Tasty Bacon Scones

A couple of days ago, I really felt like some savoury scones. Unfortunately, I had no cheese. Sad times! So I had to come up with something else, so I took to my go to recipe (Find it here) and I went to town:

Here is my modified recipe:

225g self raising flour

55g butter/margarine

crispy bacon – as much or as little as you would like

150ml milk

1tsp Turmeric

1/2tsp Paprika

In a frying pan, heat a little oil.

Cut up some bacon (I used about 4 rashers) into small bits. This doesn’t have to be neat. Fry the bacon until it is dark in colour and has shrunk into little bits but is still a little soft.

Take off heat and place on to kitchen towel. Leave to cool. Once it has cooled, it will harden into little crispy morsels of goodness.

Preheat the oven to 220C/425F/Gas 7.

Mix together the flour, turmeric, paprika and salt and rub in the butter. (The paprika gives a bit of extra smokiness to the bacon, and the turmeric adds a little colour and a more mature flavor, much like mustard would to a cheese scone)

Sprinkle in the bacon and mix in thoroughly for an even distribution.

Add the milk to get a soft dough.

On a floured work surface, knead lightly until just holding together. If you knead too much it ill not have the signature crumbly texture.

Roll out the dough to a thickness of around 2cm for little scones or 3cm for larger scones.

Use a cutter to cut out the scones and place onto a greased baking tray.

Brush the tops of the scones with a little milk.

Bake for 12-15 minutes until golden. Leave to cool.

There you are – one batch of super tasty crispy Bacon Scones. Slather with butter and enjoy!
